WINEMAKER’S NOTES:

Growing conditions throughout the spring and summer were dry and very warm, giving great optimism for the harvest of 2018. Late August and in to September was extremely hot, this produced severe thunderstorms with some very heavy rains. The humidity levels remained high throughout September, giving some concern for breakdown in many varieties of grapes.

The Pinot Noir grapes for this wine are grown on a small vineyard in Niagara-on-the-Lake where we were able to manage the crop load and leaf thin to allow a good airflow around the grapes, keeping breakdown to a minimum. Grapes were harvested by hand and in great condition. Crushed and de-stemmed before fermenting in small bins.

Punch downs by hand were completed 2-3 times daily during ferment. After fermentation was complete the wine was pressed off the skins, settled and pumped to barrel for further aging.

Bottled with minimum filtration.

TASTING NOTES:

This Pinot Noir has a dark cherry skin colour with aromas raspberries and wild strawberries with very pretty floral notes.

The palate is rich and showing ripe cherry and raspberry flavours and just a touch of cinnamon and ginger spice. It has beautiful mid palate texture that is followed by a great balance of acidity showing a touch of red currant on the finish.

TASTING NOTES:

This wine will pair well with roast chicken or a glazed ham. It would also pair well with dishes that include wild mushrooms and seared salmon and tuna dishes.
