WINEMAKER’S NOTES:

Follow a fairly normal winter spring seemed to arrive quite quickly at the end of March. Through April we had warm sunny days which encouraged bud break a few days earlier than normal.   May was relatively dry with some optimal rains gave us a great start to the growing season.  Summer moved along with long dry spells and hot conditions. right through until the beginning of September.  Things were looking great with realty good flavours in the grapes and harvest looked to be getting close. Then came the rains and humidity which caused some concerns with disease pressure and having to work around some not so great conditions for harvest. However, I think by the time harvest was all in the flavours were great and the wines were nicely balanced.

The grapes for this wine were harvested early in October, crushed and destemmed before pressing. A cool ferment keeping the intense aromas and flavours vibrant in the wine. After fermentation was complete the wine was fined and filtered before transfer to a closed tank and a second fermentation is initiated by adding sugar and yeast. The CO2 that is produced during this ferment is trapped in the wine giving a fine, creamy bubble in the glass. The wine is filtered before bottling

TASTING NOTES:

Very light in colour with an incredible intensity on both the nose and the palette. There is a creamy, rich texture on the mid palate with fine bubbles and just enough acidity to balance the sweetness

Tropical fruits, honey and white flowers A wine with elegance and balance.

Drink this wine chilled as an aperitif or pairs well with dessert.

My favourite pairing – chilled with good friends and conversation.

Best served between 6-8 degrees C
