WINEMAKER’S NOTES:
Follow a fairly very wet late fall in 2021 and a very cold snap in January of 2022. This cold event was troublesome, some varieties such as Pinot Noir, Pinot Gris and Sauvignon Blanc being badly damaged Winter continues well into April with a cooler than normal temperatures. Summer months were favourable for grape growing with lots of sun and heat with just enough rain, maybe too heavy at times but just enough at the right times!! Conditions for harvest were very good, fruit quality was impressive but yields were lower than normal.
The grapes for this wine were harvested in amazing condition from a mature vineyard close to Vineland. Grapes were destemmed and crushed before being transferred into small fermenting bins. Fermentation was completed using a selected yeast, the cap was punched down three times daily by hand, extracting colour, flavour and gentle tannins. After 25 days on skins the wine was pressed off, settled and transferred to 300L French oak barrels for aging. After 24 months in oak the wine was racked from barrel to Stainless steel tank where it settled before bottling.
TASTING NOTES:
Dark purple in colour with aromas of ripe red and black raspberry with pretty violet and lilac notes. The palate shows cherry and red raspberry flavours with some notes of oregano and sweet pepper. A wine for med term cellaring of 5-7 years if not more.
