MUSCAT BUBBLE
VQA Ontario
Alcohol: 9%
pH: 3.12
TA: 8.2
RS: 43 mg/L
Production: 1200 bottles
WINEMAKER’S NOTES:
Following a fairly very wet late fall in 2021 and a very cold snap in January of 2022. This cold event was troublesome, some varieties such as Pinot Noir, Pinot Gris and Sauvignon Blanc being badly damaged Winter continues well into April with a cooler than normal temperatures. Summer months were favourable for grape growing with lots of sun and heat with just enough rain, maybe too heavy at times but just enough at the right times!! Conditions for harvest were very good fruit quality was impressive but yields were lower than normal.
The grapes for this wine were harvested in mid September, crushed and destemmed before pressing. A cool ferment keeping the intense aromas and flavours vibrant in the wine. After fermentation was complete the wine was fined and filtered before transfer to a closed tank and a second fermentation is initiated by adding sugar and yeast. The CO2 that is produced during this ferment is trapped in the wine giving a fine, creamy bubble in the glass. The wine is filtered before bottling.
TASTING NOTES:
Very light in colour with an incredible intensity on both the nose and the palette. There is a creamy, rich texture on the mid palate with fine bubbles and just enough acidity to balance the sweetness. Tropical fruits, honey and white flowers, followed on a long finish with flavours of Turkish delight! A wine with elegance and balance.
