WINEMAKER’S NOTES:
Made from 100% Sauvignon Blanc picked in late September along the Shores of Lake Ontario where the cooler temperatures keep the acids in balance and the flavours vibrant.
Grapes were harvested and pressed off quickly and the juice cold settled before being transferred to large oak barrels for fermentation. The wine remained on its lees after fermentation
For a few months before being racked to tank and filtered. The wine made using the Charmat method.
TASTING NOTES:
A very pale straw colour with aromas of grapefruit and citrus blossom, the palate is bursting with citrus and stone fruit flavours, a fine bubble giving a creamy texture with mineral notes on the finish.
A refreshing glass of wine that pairs well with shellfish or enjoy just on its own.
